ROASTED TURKEY

Ingredients:

14 to 16 pound fresh whole turkey

3 to 4 cups homemade chicken soup

½ cup of fresh chopped herbs (dill, rosemary, thyme, and basil)

Salt and pepper to taste

3 tablespoons of olive oil

1 Golden Delicious apple

Directions:

1. Preheat oven to 375 °F.

2. Chop the herbs, then mix with olive oil to create the turkey rub. Add salt and pepper to suit your taste.

3. Remove and dispose of the turkey’s innards.

4. Rest the turkey on a rack, within the roasting pan.

5. Rub the herb and olive oil mixture on the turkey.

6. Make shallow slices into the skin of the apple, then insert the entire apple into the turkey.

7. Simmer the chicken soup until it is warm, then turn off the heat.

8. Put the turkey in the oven and periodically baste it with broth from the chicken soup.

9. Bake turkey for 3 to 3 ½ hours (approximately 13 minutes per pound), until the meat thermometer inserted into the thickest part of the breast reads 155 °F.

10. Remove the turkey from the oven and cover lightly with aluminum foil. Let it rest for 15 to 30 minutes before carving.
